Ingredients:
1 big-sized eggplant
garlic powder
shredded mozzarella cheese
oil spray
oregano
pizza-pasta sauce (homemade or any good brand)
salt to taste
Method:
Chop eggplant into round slices. Sprinkle some salt on it and let it rest for 10 minutes. Squeeze a little and tap with a dry towel. Spray some oil in a pan and cook the slices lightly on both sides.
On a baking dish, spread some pizza-pasta sauce first, then arrange the eggplant slices, spread the sauce again over the slices, sprinkle garlic powder and oregano, and add cheese. Put the slices back over again and repeat the same process. You may add extra cheese on top. (Note: the quantity to be used for these ingredients is as per one's liking:))
Bake for about 10 minutes at 200 degrees Celsius. Serve hot.
